Snack truffles

(vegan, gluten free, lactose free, clean eating, nut free)

this recipe is actually not “discovered” by me, but the two Dutch dietitian Merel and Tessa. The two ladies are founders of the blog The Green Happiness. while they’re having their own office, they decided to share all these “good to know” tips online as well; which later also turned into a book “The 50 days of green happiness”. It’s in Dutch though.

But however, I found them via Instagram and got interested in their book. I try to follow their tips and recipes when I discovered this one. Because it’s so delicious and so easy and quick to make I would like to share it with you!

Bountylolly snack

Ingredients:

(for 8 truffles)

– 6 sp coconut flour + extra for rolling them

– 70 g oats

– 4 sp chickpeas (already soaked and cooked)

– 7 medjool dates (remove the pits)

– 1 lemon peel

– pinch of salt

– half a lime juice

– 3 sp honey/agave syrup/maple syrup

– 100 g pure chocolate (100% cacao)

Extra for the topping:

– pistachio nuts, almonds or walnuts

– goji berries, raisins, cranberries, any other dry fruit

– oats, cacao nibs, coconut chips

– homemade muesli

–> What are you going to use for the topping is up to you. I used pulse blended almond and pumpkin seeds. Both of them were roasted first. I suggest you use something you have at home already anyway.

 

How to make:

Mix all the ingredients, except the chocolate, plus add 6 sp of water and blend them into a smooth mass. I used the food processor, but it should work with the hand mixer as well. Mass should look like this one on the picture bellow.

Equally divide the mass into 8 pieces and start rolling them into a shape of the balls. Roll them through the coconut flour and put them in the freezer, for about 10 minutes.

In meanwhile we can melt the chocolate. When done, take out the truffles, put them on a flat surface and press them down with the bottom of the spoon. They should look like a disc let say.

Take a tea spoon and pour the chocolate over the truffles (either just on the top or dip them in or cover them completely – it’s up to you. Chocolate will harden quite quick (that is as well the reason, why we put truffles into the freezer), so make sure that you put the topping on as soon as possible. The best way to do it is right after you pour over the chocolate. I did one by one and it worked perfectly fine.

 

Put them in the fridge so that chocolate hardens completely and later transfer them into the freezer. One truffle is meant for one time snack.
