Healthy Pancakes

 

I’ve tried out two different recipes today and I love both versions. So, I couldn’t decide which one to share with you and what am I going to do? 🙂 I will give you both recipes!

Because of the experimenting I made a bit too much; let say for 4 person instead for 2, but no worries…I’ll have a pancake breakfast tomorrow again. 🙂

And here they are. All you need is few BIGGER BOWLS where you can prepare the mass, 2 PANS (it can be one as well, but then you can’t make a sauce at the same time as pancakes) and A WHISKER (possible to do with the forks as well).

 

Buckwheat pancakes
(paleo, vegetarian, gluten free, lactose free, sugar free)

Portion: 2 pers., time: 30’ (10’ preparation time, 15-20’ baking), 1 cup – 1,5 dcL

  • 1,5 cup buckwheat flour
  • 1 banana (I used 1,5 smaller size, ripe)
  • 2 eggs
  • 1 tsp baking soda
  • cinnamon
  • 1 cup almond milk
  • coconut oil

Buckwheat pancakesInstructions: mash the banana and add all the other ingredients, except the coconut oil. Mix good. Put some coconut oil in the pan, wait the pan to get hot and start making pancakes the same way as all the other pancakes/crepes. I use the soup spoon and spill slowly into pan, until the desired size of a pancake. Wait until mass on top a bit “dry” and turn the pancake to bake on the other site.

Pancake is finished. Repeat until all the mass finished.

 

Oat pancakes
(paleo, vegetarian, gluten free, lactose free, sugar free)

  • 65g oats
  • 1,5 banana (medium size, ripe)Oat pancakes
  • 4 eggs
  • cinnamon
  • coconut oil

Instructions: mash the banana and add all the other ingredients, EXCEPT the coconut oil. Mix good. Put some coconut oil in the pan, wait the pan to get hot and start making pancakes the same way as all the other pancakes/crepes. I use the soup spoon and spill slowly into pan, until the desired size of a pancake. Wait until mass on top a bit “dry” and turn the pancake to bake on the other site.

Pancake is finished. Repeat until all the mass finished.

 

 

Blueberry – Mango sauce

 

  • 2 cups blueberries (1 cup – 1,5 dcL), frozen or fresh
  • 2 cups mango, frozen or fresh
  • 2 spoons honey
  • 2 spoons coconut cream (optional)
  • water
  • coconut oil

Instructions: put a small spoon of coconut oil into the pan and wait until liquid. On middle heat! Add blueberries and mango and stir it for a while. Add approximately 1 cup of water, stir and add honey and coconut cream (if you have). After awhile you can smash the fruits a bit, by pressing down with the fork.

  • coconut chips
  • roasted and crushed almonds

I made both recipes and one sauce. That’s why I got mass for 4 persons. But nice thing is, that I swooped the layers, so I had both recipes on one plate :). Plus I have enough for another 2 person breakfast tomorrow.

        So, yesterday I couldn’t resist no more.. It has been busy these days and I really had no time BUT I decided it will be a pancake Friday dinner… I know they are probably more appropriate to eat in the morning but I just couldn’t help myself. So we joined forces with my hubby and made both types of pancakes. We decided not to put the coconut cream in sauce even though we had it… Just to see first how it is without. It’s funny how my first bites felt like… ‘Oh but this are not pancakes…’ But I just stopped and said to myself.. No, they are not. They are HEALTHY pancakes. So slowly I begun to taste the different flavors and by the end I LOVED them! There were enough for dinner and we will have them for lunch today too! So plenty of deliciousness on our plates 🙂 Thank you Saša!!!❤️

          They are a bit different but they are as well nicer. Guilt free and no bloated or painfull belly. They are better to start the day with, so they give you a kick start, but I can imagine you couldn’t resist. A tip, next time make them in the evening (after dinner so you don’t feel hungry) but reheat them for the breakfast 😊
