Stir fried dish

I need to share this recipe with you, not because it takes only 10 minutes to make it, but because it’s delicious, can varies in topping and it’s a perfect meal for dinner. Rich in healthy, good carbs (vegetables), proteins (meat/fish/shell fish/tempeh (soya)/roasted cashew/roasted peanuts and good fats (coconut oil). All that enriched with awesome spices.

Stir – fried dish is loaded with veggies that you like and quickly fried on coconut oil. Why quickly? To keep the crunchiness, avoid loosing the vitamins and minerals and because you just need to warm it up a bit. You can combine almost anything you like (I am still talking about vegetables here;)).

Few suggestions (combinations are unlimited):

–       broccoli

–       mushrooms

–       bell pepper (all three colors)

–       zucchini

–       carrot

–       bean sprouts

–       Chinese cabbage

–       paksoy

–       spring onion/red onion

–       white radish

–       snow beans

–       mini corn

Some vegetables like tomato, cherry tomato and cucumber are not the best to put them in a pan together with the other veggies at the same time. But later, a minute before will you take the pan off the fire. That is because the tomatoes are quickly soft and cucumber is not really the nicest to be eaten warm.

How great is that? Either you have to empty your fridge, because vegetables are going bad, you need to use the veggies you have for crudités or you might bought a bag of mixed veggies for stir-fried in the supermarket.

Protein toppings (one at the time or more):

–       shrimps

–       raw salmon file

–       tuna file

–       beef

–       chicken

–       roasted and crashed cashew

–       roasted and crashed peanuts

–       tempeh (soy product)

Ok, let say you picked the vegetables and you picked what protein topping will you use. The only thing you still need to do it to pick the spices and “dressing”.

Here are few suggestions:

–       fresh or dry chili, lemon grass, ginger, fresh coriander/cilantro

–       unsweetened soya sauce, sesame

–       coconut milk, green/red curry

At the supermarket you can look for some spices that are in mix. Make sure it contains no sugar and no or very little salt, but pure mix of dry herbs (ginger, garlic, chili, turmeric, lemon grass, bell pepper, etc.).

Herbs are good and healthy, can change your dish from good to delicious one!

But, what would it be the best “stir-fried” dish? Well, the one you made with the combination that fits to your taste. You can never get bored or enough of it, because by already changing few veggies or different protein topping can be a totally different dish.

The same thing with the spices – try – taste – explore – swop/change – combine – and most important enjoy!
