Muesli

Hi there,

It took me quite some time to think of a good recipe which is going to be my first recipe online. Jeej 😀 I have tons of them and there are plenty to come, as long as you’ll keep up with me. As my first one I wanted to be a special one, but not in ingredients, but more from the meaning side. And here it is – Home made muesli! And then you think, what the heck is so special about muesli? Well, I will give you the three main reasons about it!

  1. It’s the first “food” I started to make when I wanted to avoid of eating too much gluten and I was getting to know the paleo diet.
  2. You can use it in so many options: as a muesli with a nut milk, as muesli with yoghurt, as afternoon crunchy snack, as an extra in your favorite smoothie, as a topping in your ice cream and nice cream, as a topping on your cake, in your protein shake before exercising, in your chocolate, avocado pudding…the options are just on and on!
  3. Because is quite easy and quick to make, you can store it for a very long and because you will save on time at the shops by reading the labels on the bottom of the muesli boxes – what do you think of making your very own flavor! 😉

(gluten free, lactose free, refined sugars free, paleo, vegan)

Main ingredients:

–       1 cup Brazilian nuts

–       1 cup walnuts

–       2 cups almonds

–       2 cups cashew

–       3 cups gluten free oats

–       2 cups with chia seeds, hemp seeds, flax seeds, sesame, pumpkin seeds, sunflower seeds

Flavor ingredients:

–       2 cups with goji berries, dates, apricots, home dried apples and raisins (mix of whatever you like)

Side ingredients:

–       3 pinch of salt

–       ½ cup coconut oil/butter

–       1/2 cup date paste/agave syrup/honey

–       cinnamon in powder

–       pumpkin seed oil (for a nutty flavor, not a must)

Equipment: oven, oven tray, baking paper, mixer and a big bowl

Let’s get started:

Main ingredients – you can basically mix all kind of nuts you like or have at home. Put them together in a big bowl where you can later mix all the ingredients. Nuts that are not crushed or are simply too big – put them through the “pulse mix” in a mixer to get chunks. Add Side ingredients to the nuts.

Mix really good and spread it on top of the baking paper, which one you laid on the oven tray. If you have a lot of mass than is better to spread it on 2 trays, thinner the layer, better is baking. Set the oven on 160° and bake it for approx. 20 minutes. Keep an eye on baking.

Prepare flavor ingredients – same as for the main ingredients, you can add fruits you like. For easier baking and later eating is better that you cut dry fruits on small pieces. A tip – I use scissors for cutting dry figs, much faster and easier than with the knife. When ready, put it on a side.

After 20 minutes baking, take it out, stir it good (so that the bottom layer comes to the top and top to the bottom) and put it back for another 3 minutes. Repeat this step another 2 times (quick view = 20’ + 3’ + 3’ + 3’).

Does it look nice, golden color? Then it’s ready. Take it out of the oven and add Flavor ingredients. Stir them into mass and let it cool down.

When completely cooled down, store it in a dry and good closed dish/bucket.

Ok, hope you kept an eye on “baking” process and you didn’t manage to burn it!

TIP! This recipe is my standard recipe for muesli. To not get tired of the same taste over and over again you can play with different spices. And here are some examples:

 

WINTER EDITION:

– flavors: “5 spice” spices (find recipe here), cacao nibs

– dry fruits: apple, pear, plum

SPRING EDITION:

– flavors: bee pollen, ginger, agave syrup

– dry fruits: cranberries, cherries

SUMMER EDITION:

– flavors: lemon grass, ginger

– dry fruits: strawberry, cranberry, berries in general

AUTUMN EDITION:

– flavors: Speculaas spices (find recipe here)

– dry fruits: kaki, dates, raisins

TROPICAL EDITION:

– flavors: coconut flour, ginger powder

– dry fruits: pineapple, mango, papaya, coconut chips
